Easter breakfast at home and a walks i venice canals

I love the holidays. I love the cute decorations, the pretty pinks and fun little details, and of course, preparing healthy and beautiful food. For easter morning, I decided to make a beautiful and indulgent breakfast that is filled with bright colors and feels like something a kid would want - but is still a healthy choice for grown-ups.

The answer?

Pb&j bananacakes! These are so simple to make and easy to vary depending on what fruit you have available. Best of all - no added sugar. at all

  • 2 bananas

  • 4 tbsp chia seed (mixed in 8 tbsp of water to make gel)

  • 1 cup glutenfree oats

  • 1/2 cup rinsed and soaked buckwheat (i soak overnight 6 to 8 hours)

  • 1/4 cup almond milkcinnamon to tastepinch of pink himalayan salt 



Direction:

  1. Start by soaking chia seeds.

  2. Put all ingredients into your vitamix and add chia gel once it´s ready.

  3. Preheat pan to medium heat, and add a small drizzle of coconut oil.

  4. Drop mix by large spoonfuls into the pan (makes 4 - 6 cakes).

  5. Flip once the edges and top start to appear dry.

  6. When bananacakes are ready, add jelly, nut butter of choice, and toppings to taste

  • 1 cup of mashed raspberries (or any other berries)

  • 2 tsp chia seeds

  • squeeze of lemon

  • Mix together by pressing with a fork

I used trader joe´s peanut butter, but it´s super easy to make your own almond or peanut butter at home.

Just mix almonds or peanuts in a vitamix (or any other powerful food processor), and let it blend at high speed until the natural oils from the nuts break down and the mix achieves a smooth consistency.  You will need to use a spatula during the process to help push the nuts down into the blades - otherwise they will keep pushing up the inside of the mixer and not be fully ground up after just a couple of minutes, you´ll have made your own peanut or almond butter.

If you want to sweeten the mix, add some maple syrup toward the end of blending.

Shallow canals wind through this magical westside neighborhood. This is where i like to go to listen to music through my headphones, and wander over the small bridges that arch over the water. The homes are beautiful, and many of them have incredible gardens, too. It´s so quiet here it´s hard to believe it´s in the middle of one of the america´s biggest city.
